Marinated Onion and Radish Salad

The sirens are wailing again….no doubt another fire has started. The weather is still so hot and dry. Temps in the 90s don’t seem all that high….but in June, in Wyoming is another matter. Tomorrow will be in the 90s again, with very low humidity.

So, I am inside enjoying what I can from the garden… radish and onion seem to thrive no matter what. I have some small amounts of lettuce still….so I invented something to use all three.

Marinated Onion and Radish Salad

  • 6 radishes, sliced lengthwise
  • 1 onion, sliced lengthwise
  • 2 TBS  pomegranate vinegar (or seasoned vinegar)
  • 1 TBS olive oil
  • fresh ground salt and pepper
  • lettuce leaves

Mix everything but lettuce leaves, and refrigerate for at least an hour. Arrange leaves in bowl, add marinated salad.
