Carrots and Parsnips in The Garden

Last year I left some small carrots in the garden, to overwinter. Of course I forgot about them completely until this past Saturday. I was weeding out some early monster weeds and saw something that looked like carrots. The foliage was an off, brownish-gold color. Thinking it a weed, I choppity-chopped it, only to discover a carrot. I found several others, enough for dinner!

I was also happy to see that some parsnips overwintered nicely. You know, I don’t really love parsnips but they just grow and overwinter so nicely I give em space in my garden. Last spring I made parsnip carrot dumplings. Hmmmmmm. That is sounding good.
